Week 87:
RECIPE OF THE WEEK FROM THE STAFF AT HIGHFIELD HALL & GARDENS, TARA BURKE
When we think about the holidays, we often times look at our past traditions to create memories in the present. In our family, my sister’s Date Nut Bread has been a staple whenever we gather for the holidays. The funny thing about tradition is, you never know what’s going to “stick” with the next generation.
So, as my adult children were preparing for their recent holiday away from home, the one recipe they called me for was Auntie D’s Date Nut Bread!
Naturally, my sister was honored to have a place at my children’s table, and I hope you will enjoy this recipe as much as we do.
Date Nut Bread
Ingredients
Mix together the following:
- 1 bag chopped dates
- ¾ cup chopped walnuts
- 1 ½ tsp Baking Soda
- ½ tsp Salt
- 3 tbsp shortening or butter
- ¾ cup boiling water
Combine above ingredients and allow to sit for 20 minutes
While the date mixture is softening, mix together:
- 2 Eggs beaten
- 1 tsp Vanilla
- 1 cup Sugar
- 1 ½ cup Flour
Instructions
- Add the date mixture into the flour mixture, and pour into loaf pan.
- Bake at 350°F for 55 – 65 minutes
- Once cool, spread cream cheese between thin layers, and serve.
