Week 26:
There’s still some warm weather ahead so grab a couple of heirloom tomatoes while you can and make this end of summer salad. Sit back and eat this in the warm sunshine and store the memory to be brought out in January…preferably after a light snowfall!
End of Summer Salad
Ingredients
- Tomatoes, chopped
- Cumbers, diced
- Watermelon, chopped
- Red onion, thinly sliced
- Basil and/or parsley, chopped
- White balsamic vinegar
- Olive oil
- Salt & ground back pepper to taste
Instructions
- Chop the tomatoes and put them in a bowl.
- Add half as much diced cucumber and chopped watermelon
- Sprinkle with some very thinly sliced red onion and chopped basil and/ or parsley
- Drizzle in a little white balsamic vinegar and some of your very best olive oil
- Season to taste with salt and freshly ground black pepper
- Serve over a bed of arugula
