Week 5:
This dish couldn’t be simpler, and if you haven’t yet discovered the magic of butter and soy sauce together, you are in for a real treat!
Garlic Butter Steak Bites
I like to make this in a cast iron skillet, and serve it directly from the skillet as an appetizer. Or, you can make it into dinner by serving it over cooked rice. In the photo, I combined 2 cups of cooked rice with 1 cup chopped cooked pasta in a pie plate and added some cooked broccolini and chopped scallions to the mixture. Reheated in the microwave, this made a perfect nest for the steak bites, and a delicious dinner for two (with MORE leftovers).
Ingredients
- 1 ½ lbs sirloin or tenderloin steak, cut into small cubes
- 1 tbsp olive oil
- 4 tbsp salted butter
- 5 cloves garlic, minced
- 1 to 2 tbsp soy sauce
- 2 tbsp fresh parsley finely chopped or chopped scallions
Instructions
- Season the meat generously with salt and pepper; place the olive oil in a large skillet over medium-high heat.
- Once the pan is hot, add the steak in a single layer, working in batches as needed; cook the steak for 4-5 minutes, stirring often.
- Remove the cooked steak to a plate and continue to sear the remaining meat
- When done, reduce heat to medium-low and melt the butter in the pan.
- Add the minced garlic to the butter; cook for approximately 1 minute.
- Add the soy sauce and stir to mix, then return the steak to the pan and continue to cook, coating the steak bites with the garlic butter. Continue to cook for an additional 1-2 minutes, until the steak is hot but still rare on the inside.
- Remove pan from heat and sprinkle with fresh chopped parsley and/or scallions; check the seasonings and serve hot.
